Baked Eggs In Cups

There is something magical when your breakfast cooking is taken over by the budding chefs at home.These Eggs in pepper cups, besides being so colourful, are a quick, light and easy breakfast option.
Baked Eggs in Cups
Preparation time: 10 minutes
Cooking time: 15 minutes

8 medium-sized eggs (organic ones preferred)
1 teaspoon pepper
2 teaspoons of torn basil
2 teaspoons of parsley chopped
4 teaspoons of cheddar cheese/mozzarella
Salt to taste
Pepper to taste
Butter for greasing
Methods: (in case you follow the everyday method)
Prepare the eggs.
Mix /beat the eggs and add salt, pepper, chopped parsley and basil.
Add fried veggies (if using) and top it with cheese and bake for 15 minutes (in the middle rack see notes)
Optional step for exotic version
Stir-Fried veggies (optional step)
2 sliced mushroom
2 tablespoons chopped broccoli
½ white onion chopped
2 cloves garlic
2 teaspoons of sun dried tomatoes
Salt to taste
1 teaspoon paprika (or to taste)
1 teaspoon oregano
1 tablespoon butter/oil
Method (in case you follow the exotic version)
Preheat the oven to 170 degrees Celsius.
Grease four 250 ml ramekins or six 200 ml ramekins with butter
Heat butter/oil in a pan and add the chopped onions, garlic, broccoli, mushrooms and cook for a while.
Add salt, paprika, oregano, mix well and cook lightly.
Add sun dried tomatoes or black olives (whatever you have) and turn off the heat.
Allow it to cool.
