Moong Badam ka Halwa
Serves 8-10 persons

Preparation time 30 minutes+ 3 hr.soaking time

1 cup moong dal
1 cup almonds
1 cup melted ghee
1 cup sugar (not heaped)
2 cups of milk
1 teaspoon cardamon powder or more
1/2 teaspoon saffron
Wash and Soak split green gram for a minimum of 3 hrs.
Wash and soak almonds for 3 hrs in warm water. Peel
Drain the lentil dry and roast the dal/lentil for 15 minutes. Every grain will separate and will not stick to the pan. It may take 15 minutes.
Blend but not so smooth (not very coarse either)
Pour 2 tablespoon of ghee in another pan and keep aside ( this is to roast the nuts)
Add the leftover ghee in a roomy pan (around 3/4)and add all the blended lentil paste and stir it for 45 minutes and low heat.
Almond Milk preparation
Meanwhile as the lentils are browning, in another pan which has 2 tablespoons of ghee and roasts the almonds smooth.
take off the almonds which have been roasted for 15 minutes in a blender.
add 1 cup of milk and 1 cup of sugar and blend smooth paste.
