½ small ripe pineapple (450grams)
⅓ cup (80 ml) fresh orange juice
1 medium sized apple
1cm (½ -inch) piece fresh ginger, peeled, sliced thinly
1 cup of ice cubes
Mint and lemongrass leaves to serve
Peel and core the apple; chop the pineapple coarsely.
In this order, place orange juice, then apple, pineapple chunks and ginger in a blender. Add ice cubes; blend on high-power for 1 minute or until smooth
Serve topped with extra chopped pineapple, mint and pineapple fronds/lemongrass leaves, if you like.
